Pandan Coconut Waffle recipe

Hey there! This is my very first recipe tutorial ever, so please bear with me as I try to explain--or struggle to explain how to make these delicious pandan coconut waffles.
Anyway, I'd like to start off by saying that this is a pretty well-known dessert around here and my mom and I have been making it as far as my memory can go back. One of the reasons I'm sharing this is because we finally kind of got it to what we want it to taste like after years of trial and error. Fair warning though, it's all about the egg beating. So beat those eggs real well.
Things you'll need:
-2 extra large eggs
-1 packet of baking powder (equal to 4 teaspoons)
-2 packets of vanilla sugar
-2 packets of vanilla sugar
-2 packets of coconut cream powder (equal to 1 cup)
-2 cups of enriched, bleached flour
-1 teaspoon of pandan
-1 cup of water
-1/2 cup of sugar
-1/3 cup of vegetable oil
-sprinkle of salt
-a waffle maker!

1. Crack two eggs in a medium sized mixable bowl. Beat the eggs for about seven minutes on lowest speed (or when it's nice and frothy at the top). Add in the vanilla sugar.
2. In another bowl, mix together the water, sugar, coconut powder, salt and pandan. Put the bowl in the microwave for a couple of seconds (until it's warm and the coconut powder clumps are all melted).
3. Mix together the flour and baking powder in the bowl of eggs.
4. Slowly pour fractions of the bowl of coconut powder mix into the bowl of eggs and flour. Add in the vegetable oil and mix well.
5. Set the bowl aside for about 30 minutes to let it settle a bit. (I'm not sure if this step is necessary but it's one of those things my mom instilled in me, so I'm too scared to not do it!)
6. Plug in your waffle maker and let it heat up (you can also oil the inside or spray it with Pam, but I didn't since they don't really stick for me). Mine has really tall square combs, since it's meant to make Belgian waffles, so I had to use about 1 cup to get my waffles the right amount of fluffy. This varies though, depending on the size of your machine.
