Not sure when my last post was, but here I am.  I've been trying to start writing in my journals again but sometimes I just want to be in my bed and type. So much has changed and my life ended up being somewhere I wasn't quite satisfied with, despite working so hard to be here 2 years ago. Failing relationship, lack of creativity, lack of happiness. I guess I'll be putting these hard lessons in the book of things learned in your early twenties. Sounds like a shitty Buzzfeed list. But anyway, the Great Barrier Reef died today and I'm sitting here trying to get over someone who never appreciated me and who constantly hurt and lied to me over the course of 3 years. I feel like half the girl I was back then, a little lost and not quite fully conscious that it's probably time to let go. It's only been a few days, but I realized that I probably won't bounce right back to who I was before all this. Another hard lesson is that maybe it's not just about letting go of this relationship but letting go of who I was before. I just want to feel like myself again. I don't know.

Creamy Avocado and Spicy Pineapple Paleta popsicle recipes Posted at 9:06 PM 0 comments (+)

My birthday was about four months and ago and Wilms bought me a popsicle maker/mold as a late surprise present. I've been using it almost every week for a new recipe but these two have been my favorites so far! I love avocados but the pineapple one caught me by surprise. I never really enjoyed pineapples but the extra spicy punch goes really well with the sweet and tangyness. I got the recipe from here.

For the creamy avocado popsicles, here's the recipe:
1 avocado (I like to use the giant hass avocados)
1 cup of half and half
1/4 of a can of sweetened condensed milk.

1. Peel and remove the seed from your avocado. Scoop its contents into a blender.
2. Pour in the half and half and sweetened condensed milk into the blender.
3. Blend everything until smooth.
4. Pour into popsicle molds and freeze for 20 minutes.
5. Remove from the freezer and place popsicle sticks in and put it back in for at least 3 hours.
6. After it's completely frozen, you can take it out and serve or leave it in the fridge for up to two weeks!

And here is the recipe for the spicy pineapple paleta popsicles:
1 pineapple
1 cup of water
1/2 cup of sugar
1 serrano pepper, split lengthwise down the middle
1 tsp of ground chile (I used arbol)
2 tablespoons of lime juice
pinch of salt

1. Finely dice small rectangles of 1 1/2 cup of pineapples and chop up the rest. The diced pineapples will be the tiny chunks in the popsicles!
2. Mix the diced pineapples with the ground chile and salt.
3. In a small saucepan, combine the water and sugar and stir on medium-high heat until the sugar dissolves and the mixture boils. Add the serrano pepper and lower the heat, letting the pepper steep in the simple syrup mixture. Turn off the heat and let it cool. Strain the simple syrup through a fine mesh sieve to remove the pepper.
4. In a blender, combine the chopped up pineapples with the simple sugar and lime juice. Blend until smooth.
5. Pour the blended mix into a bowl and mix in the diced pineapples.
6. Divide the mixture and pour it into the popsicle molds.
7. Place the popsicle sticks in and freeze for about 4 hours, or until completely frozen.

Despite having all this free time to myself, I was beginning to feel a bit melancholic. So, I decided to pick Tiff up and head to the beach--on Memorial Day. It was so crowded, I feel dumb for not realizing beforehand. But the days have been too nice to spend indoors and for that, I'm thankful to have been able to escape my house.

Today was an exceptionally good day. I woke up in the morning and started off with a light breakfast (toasted wheat bread with sunny-side-up eggs) and then rolled out my mat and did some pilates. Then I showered and went out to run some errands, bought some new workout clothes, and came home. I was planning to go jogging at the beach or the park--which reminds me, there are major signs of drought everywhere (burnt grass, dry lawns)--but I decided to hang out with an old friend instead. We've been trying to go to the beach for a while now, but I kept ignoring him sooo....after nine months, we finally did it! The weather was perfect and the clouds covered everything but the sun. Some flyers were also posted on this old mysterious house at the corner of the street I've always wondered about, explaining that it was actually one of the first homes built in HB. They're beginning to restore it so it won't look like a creepy, haunted place anymore. Anyway, the rest of the day consisted of hamburgers, thousand island sauce, weird poses in front of interesting things and teaching Vinh how to place the red dot on my face in my camera to focus.

I wasn't planning on making a tutorial while doing this project, but I had my camera and tablet with me so I thought, "why not?"

Fabric I got at the swapmeet boasting a total of only $8 for all of this.

measuring tape
pencil (or fabric marker would work better)
2 yards of flowy fabric (I believe the correct term is chiffon but I can't help but think of cake)

Steps 1 & 2: Cut your fabric according to the guide I drew so wonderfully above.
Step 3: Sew your sleeves into a tube shape. Optional--you can add some fringe trim!

Step 5: (Yes, I know I switched the fabric in this picture) Sew all your pieces together, right way facing each other. Hem necessary parts, turn it inside out and you're done!

I couldn't get a picture of myself wearing these due to breaking my tripod (I'm a clutz and it's been broken since Christmas), but I'll post one soon! Just trust me when I say these things are so comfortable and breezy to wear, especially with summer already here.

Yesterday, I woke up a little bit earlier than my usual Saturday routine. It feels so nice having the weekend to myself again. With all this free time, I'm making myself a small summer project list before summer school starts. Which brings me to the point of this post--I went to the swapmeet yesterday morning for the first time in a while. My purpose was to buy fabric but I couldn't help enjoying the beautiful weather and breezy morning air. Plus, who doesn't love the smell and taste fresh kettle corn? I was also able to haggle and purchase some cheap fabric for my kimono project too (a total of $8 for about 6 yards of fabric and 2 yards of fringe trim).

Lying in bed the other day, I had a funny (and possibly naive) thought. What have I learned in my twenties? It's only been two months since my 20th birthday and I don't know if that triggered all these odd bodily changes, but I'm starting to notice things. For one, dehydration (from a short bout of food poisoning) causes your skin to lose elasticity, thus leading to stretch marks! Sad day when you discover little permanent markings on your once smooth thighs. Oh god. And I can't handle coffee, I just can't. Also, maybe using shampoo instead of shaving cream isn't a good idea. I've recently had that epiphany and made a quick change (which included an enjoyable trip to Target). And maybe scheduling work and school back to back, including time for sleep, and only leaving yourself two hours a day to study isn't such a great idea because you forget to add for lag time and dilly-dallying time and quiet time.....and time for yourself. And I've already known this almost my entire life, but you can't have both fun time and school time because fun time always ends up taking longer than you intended. The consequences just bite you in the ass harder than when you were a teen because all of these responsibilities and things are actually starting to matter and affect your future somehow. And you know, shit you did in high school really doesn't matter (I've been telling myself this for a while) and all your hobbies that you stick with are few of the things that'll keep you sane, happy and feeling like you still have control over yourself. Because when responsibilities and things start to matter, all you want to do is go back to doing things that you think didn't matter and have no say in your future--but it does! Doing things I love, no matter how trivial, is what keeps me from giving up on whatever bullshit obstacle I have to go through. I'll be extremely vague and quick, but after the semester ended and I went home and shed the stinking stress that was hanging off of me since the start of this year and did what I used to love doing during my free time, I felt like I was in my own skin again. Don't get me wrong, there's tons of things coming my way that's going to drive me insane and kill me slowly inside, but maybe that's why I'm writing this more for my sake.
